My brother and dad will not eat any vegetarian meals at all.Although I have cooked meals that had the morningstar farms fake chicken and they havent noticed. So what are some good and easy vegetarian meals that taste good?

I just need some ideas for some basic and simple vegetarian meals, because I am running out of ideas!

A: Tofu Stir Fry and Veggies - with homemade teriyaki sauce Sweet and Sour Tofu Bean burritos Tofu Lasagne Spaghetti squash and homemade marinara sauce Breakfast burritos (scrambled tofu, zucchini, potatoes, onions, mushrooms, yellow squash, fresh garlic in whole wheat tortillas with avocado, salsa, tomatoes, onions, lettuce...yum!) - heat up a tablespoon of oil in a pan, start with the tofu. When that starts to brown add in a tad bit more oil, and then add in onions and garlic. After about 5 mins, add in rest of veggies...cook for about another 5 mins or so....or until veggies look done but not mushy. Oh, and add in some spices - oregano, basil, rosemary, thyme, etc. "Mexican" casserole - use corn chips for the crust (unless you can find a vegan/veggie corn tortilla). I first mix in garlic powder and Italian spices in the beans, with a little bit of jalapeno juice in a pan on low heat before making the layers....Make layers of chips or tortillas, enchilada sauce, beans, onions, bell peppers if you like in that order...make at least 2-3 layers of each, and top off with chips/tortillas and sauce. Bake at 350 for about 25 mins. Serve with jalapenos. Tofu sandwiches...two ways, either slice up the tofu and brown in a pan then put on bread with tomatoes and lettuce and sprouts.... Or, cook one brick of tofu in a pan scrambled style, adding in finely chopped mushrooms and onions...spice with garlic and black pepper....while that is cooking, put an avocado in a food processor and mix with Sriracha sauce (tad bit as is spicy),1/2 tablespoon of olive oil (or if you prefer vegan mayo), 1/2 tablespoon mustard, pinch of sea salt and black pepper, and a splash of lemon juice. I will also add 1/2 tablespoon jalapeno juice or sweet pickle juice. Blend until creamy. When tofu/mushroom/onion mixture is done, I mix with the avocado blend. Chill. Serve on bread with fresh tomatoes and crisp lettuce.

My younger cousin is coming to stay with me soon and she is a strict vegetarian. I have never cooked for a vegetarian before so I really don't know where to start! Also, my family is a big eater and any meals I prepare would still need to be very filling. Thank you. :)

A: If your cousin is the only veggie, they stay away from the fake meat products – they are great to us veggies but tend to skeve out those who would rather eat meat. Q: What are some good Low Fat Vegetarian Meals?
Looking for some healty vegetarian meals... new to being a vegetarian. About a month now. My daughter decided to become one, so i am too. my uncles a vegetarian and his birthday is coming up; and vegetarian meals and desserts are often more complex and often have ingredients I've never heard of........

A: Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs. Amy's Indian food or Trader Joe's Indian Food (Dal) with rice. Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad. Hummus, pita bread and a salad. Gardenburger Breakfast Bacon - make a BLT add avacado. Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar. Leave out to room temp until cheese is 'melted' looking. Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard. Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad. Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down. Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad. MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese. Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk. To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top. Quorn turkey roast, with mashed potatoes and a vegetable. Use leftovers on for a 'turkey' sandwich or in soup - Vegetarian Chicken Noodle Soup 6 cups of pure water ¾ cup Vegetarian Chicken Soup Base 6 organic celery stalks, chopped 1 ½ cups sweet onion 6 carrots, chopped finely 1 package organic noodles (rice, corn or barley) 1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up) Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders. Basil, Tomato and Mozzarella Sandwich INGREDIENTS 1 (1 pound) loaf Italian bread 6 fresh basil leaves, chopped 2 tomatoes, sliced 4 ounces fresh mozzarella cheese, sliced (Soya Kaas) 1/8 teaspoon red pepper flakes 1/2 cup balsamic vinegar DIRECTIONS Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches. In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

A: This website's really good for veggie recipes. I like it cause you can search based on ingredient or category, and people leave reviews and ratings on all the recipes, so you can pick out the good ones. Also, here's a recipe I love for when I'm trying to impress: Roasted Tempeh with Dijon Sauce 1 lb tempeh, cut into 4 portions 2 1/2 cups vegetable stock 3/4 cup tamari or soy sauce 1/4 cup rice vinegar 2 bay leaves 2 T finely chopped rosemary or thyme (whatever herbs you want, really) 3 garlic cloves, minced 1) Bring a medium pot of water to boil and boil tempeh for about 10 minutes. 2) Mix together the rest of the ingredients. 3) Put tempeh in a baking pan and pour the liquid on top. Bake uncovered for 30-40 mins at 350 F (180 C) turning over halfway through. Remove from oven and let the tempeh sit to soak up some of the liquid. 4) When it's time to serve it, pour the excess liquid out, reheat in the oven until slightly brown on the edges (10 mins or so). Dijon Sauce: 1/2 cup grainy Dijon mustard 1/2 cup cider vinegar 1/4 cup soy milk 2 T Maple syrup 2 T brown rice syrup (you can just use extra maple) 1 t orange zest (optional) 1) Mix together all the ingredients in a small saucepan. 2) Put over medium heat and bring to a simmer 3) Cook for 20 mins, until slightly thickened, stirring often. 4) Serve over tempeh (I like serving it on the side, as some people find the sauce is quite strong--vegetarian gravy would be nice as well, but the Dijon sauce gives a nice contrast.) * Add soy milk to the sauce last and slowly to avoid curdling. I LOVE this served on a bed of quinoa or rice pilaf with some steamed broccoli and sauteed mushrooms. It presents really well, and most people like tempeh, even if they're not used to it.

I have a friend who is vegetarian and every time I eat a vegetarian meal it gives me gas as well as the runs. What can I do about this?

A: Your family might enjoy the wholesome goodness of a carrot pie: INGREDIENTS 1 (9 inch) unbaked pie shell 3/4 cup sugar 2 cups wholesome chopped carrots 2 eggs 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 3/4 cup milk DIRECTIONS Preheat the oven to 400 degrees F (200 degrees C). Press the pie crust into the bottom and up the sides of a 9 inch pie plate. Bake the pie shell for 3 to 5 minutes, just to firm it up, then remove from the oven, and set aside. Place wholesome carrots in a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain water, and mash wholesome carrots until smooth using a food processor, or potato ricer. In a medium bowl, mix together the wholesome carrot puree, sugar and eggs. Mix in the cinnamon and vanilla. Gradually stir in the milk. Pour the mixture into the partially baked pie shell.
